Delicious Butternut Squash Soup Recipe! YUMMY!

Who Doesn't Crave Soup When It's Cold?

Here's a classic recipe for Butternut Squash Soup:

Ingredients:

  • 1 medium-sized butternut squash (about 2 pounds)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, peeled and chopped
  • 1 apple, peeled, cored, and chopped
  • 4 cups vegetable broth (or chicken broth if you prefer)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional, for a creamier soup)
  • Chopped fresh parsley or chives for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Place the squash halves on a baking sheet, cut side up, and drizzle them with olive oil. Season with salt and pepper. Roast in the preheated oven for about 45 minutes, or until the flesh is tender and can be easily pierced with a fork.

  3. While the squash is roasting, heat the remaining olive oil in a large pot over medium heat. Add the chopped onion and garlic and sauté for about 5 minutes, or until the onion becomes translucent.

  4. Add the chopped carrot and apple to the pot and cook for another 5-7 minutes, or until they start to soften.

  5. Once the roasted butternut squash is done, allow it to cool slightly. Then, scoop out the flesh and add it to the pot with the sautéed vegetables.

  6. Pour in the vegetable broth, ground cinnamon, and ground nutmeg. Stir everything together and bring the mixture to a simmer. Let it cook for about 20-25 minutes, or until all the vegetables are soft and fully cooked.

  7. Use an immersion blender or a countertop blender to puree the soup until it's smooth and creamy. If using a countertop blender, be sure to allow the soup to cool slightly before blending and do it in batches if necessary.

  8. If you prefer a creamier soup, stir in the heavy cream at this point. If not, you can omit it for a lighter version.

  9. Season the soup with salt and pepper to taste. Adjust the seasonings to your preference.

  10. Ladle the butternut squash soup into bowls and garnish with chopped fresh parsley or chives if desired.
